Old Bacolet, on Grenada's south coast, was the first area on the island to be cultivated by the French. Here, on a plain located between two small rivers, grows the Cain variety of sugarcane. This white rum is made from pure sugarcane juice, distilled in a Forsythe still after a long fermentation of 195 hours at a controlled temperature.
