Mexico - Bozal Borrego is a limited release. This mezcal is made with wild maguey Castilla, which is a close relative to maguey Espadin. Similar to a Pechuga, during the second distillation, a leg of lamb, in addition to seasonal wild fruits and grains harvested from the local market, are suspended inside the bottom of the still in a basket. These wild fruits include strawberries, apples and pineapple, while additional ingredients consist of pecans and ginger. This mezcal is heavily viscous. It is fruity, but balanced with notes of citrus and finish of smoked lamb.
